Concept & Strategy: Restaurant Concept, Positioning and Feasibility
A restaurant concept is a commercial decision before it is a creative one, so BDS sets the business case first and designs to it.

How BDS approaches it
Before we decide what a restaurant should look like, we establish why it should exist in the first place.
That means understanding the guest, the market, the location, the competitive landscape and the occasions the business can meaningfully own. A destination café, an all-day neighbourhood restaurant, a high-energy sports bar and a rooftop cocktail venue may occupy similar spaces on paper, but each requires a different commercial and experiential logic.
We develop concepts around a compelling point of view and a viable business proposition. The goal is to give every subsequent decision a clear foundation: design, branding, menu, operations and launch.
For a new venue, this is where the site and the numbers are tested, before money is committed to the fit-out; the order of decisions is set out under opening a new venue. For a venue that is already trading, the same questions show whether it needs a new position as well as a new room, which is where repositioning an existing restaurant begins.
In practice
Uptown Escape, Guwahati: conceived from scratch around a café-by-day, cocktail-bar-by-night proposition, for a site that had no plan beyond an F&B establishment.
At Nuts & Brew, an established Guwahati microbrewery, the opportunity in 2025 was to reposition the whole experience, not only renovate the room, so the space, food, menus, beer and service identity moved forward together. At Ālaya Café & Bar in Shillong, concept development was the first stage of a complete BDS engagement that ran through to opening in 2026.
