Food & Beverage Development: Menus, Recipes and Beverage Programmes

The menu shapes the kitchen, the equipment, the staffing and the margin, so BDS develops it alongside the concept rather than after the fit-out.

A full breakfast at Ālaya by day: fried eggs, sausages, bacon, toast, grilled tomatoes, hash browns and mushrooms on one plate, with baked beans, a glass of orange juice and a latte in a cup printed with the Ālaya name

Ālaya Café & Bar, Shillong

Make the menu part of the brand, not a separate department.

How BDS approaches it

Food and beverage are among the most immediate ways a guest understands a hospitality concept. A menu can make a venue memorable, but only if its range, price point, flavour, presentation and service format all make sense together.

We develop the offering with the guest, kitchen, commercial model and identity in view. That can involve complete menu creation, product trials, recipe and costing systems, culinary direction, beverage programme structure or focused redevelopment of an existing programme.

The aim is a menu that gives guests a reason to come back and gives the team the standards to deliver it consistently.

The same questions apply to a menu that is already trading: which dishes sell, what each one earns after food cost, and whether the kitchen can deliver it the same way from one shift to the next. Working through that is part of improving an existing restaurant.

Selected work

Nuts & Brew, Guwahati: the food programme and menus redesigned in BDS’s 2025 repositioning. Ālaya Café & Bar, Shillong: food and beverage developed from concept to opening.

At Uptown Escape, also in Guwahati, the menu and beverage programme had to carry one venue from daytime café to evening cocktail bar.
